My Cheesecakes are for an event. How long will they last outside of refrigeration?2 Hours. The longevity of your cakes depends on whether they are indoor or outdoor and the temperature of the environment. We recommend keeping cheesecakes refrigerated for as long as possible before displaying them for your event. Because cheesecake is a temperature sensitive product, the longest to keep your cheesecakes outside of refrigeration is 2 HOURS. We also do not recommend displaying them outside during the months of June-August because it is simply too hot for the cakes to keep their integrity.
